Cabil's Chickpea Salad

For Making Chickpeas Taste Great Like Tuna or Chicken Salad

 



Ingredients:

2 Whole Food's 365 organic chickpeas (in paper carton), drained and rinsed

1/2 cup Follow Your Heart Grapeseed Vegenaise                                             

1/2 cup chopped organic green bell pepper

1/2 cup organic chopped celery, from about one rib

1/4 cup fine chopped organic yellow onion 

1/2 cup organic cilantro 

1/3 cup organic sweet relish

Add Herbamare seasoning to taste                                                                 

2 to 4 slices whole grain or artisan-style bread 

2 to 4 lettuce leaves, washed and dried well

 

Option – Place salad on dish and eat with Late July Classic Crackers, or make toasted sandwiches on sandwich maker

                                                          

Directions:

  1. Place chickpeas, bell pepper, celery, onion, and cilantro in the bowl of a food processor and pulse two or three times to roughly chop. Continue to pulse until the mixture resemble tuna salad. 

  2. Lay out the bread and place the lettuce leaves on two slices. Spoon on the Chickpea Salad and top with the other slice of bread. Cut in half and enjoy!


Recipe Notes: 

  • To make without a food processor: Place the drained chickpeas in a bowl and mash slightly with a fork. Add remaining ingredients and stir until combined. You may want to chop the celery and onions a little finer for this version, since they won't be getting an additional chop in the processor.  


Chickpea salad will remind you of tuna or chicken salad, but much more healthier!
